How the brine calculator works

Brine percentage describes salt as a percentage of a chosen weight. FermentWise supports the two methods most commonly encountered in vegetable fermentation recipes.

METHOD 01

Water-weight brine

water weight × salt % = salt

Useful when you prepare a brine separately and pour it over whole or chopped vegetables.

METHOD 02

Total-weight brine

(water + vegetables) × salt % = salt

Useful when a recipe defines salt relative to everything in the jar, excluding the salt itself.

How much salt is in a 2% brine?

A 2% water-based brine uses 20 grams of salt for every 1,000 grams or milliliters of water.

Should I use water weight or total weight?

Follow the method specified by your recipe. Water weight is common for a separately mixed brine. Total weight is useful when salt is defined relative to the combined vegetables and water.

Can I measure salt with teaspoons?

A scale is more reliable. Different salts have different crystal sizes, so the same volume can contain noticeably different weights.
