FermentWise is an independent educational website built to make fermentation calculations easier to understand, repeat, and verify.

What FermentWise does

Fermentation often combines simple arithmetic with complicated biological processes. A small mistake in units, percentages, or measurement basis can change an entire batch. FermentWise separates those two problems: calculators handle the arithmetic, while detailed guides explain the assumptions, limitations, process choices, and safety considerations behind the result.

The site currently covers vegetable brines, sauerkraut, sourdough, pizza dough, kombucha, ginger bugs, mead, beer, and wine. Every calculator works without an account and processes its inputs directly in the browser.

How calculators are created

Each tool starts with a defined formula and measurement basis. FermentWise shows that basis on the calculator page, includes worked examples, and documents important assumptions such as starter hydration, apparent attenuation, potential-alcohol yield, or whether a salt percentage applies to water, vegetables, or total batch weight.

Calculator outputs are estimates. Ingredient composition, equipment calibration, temperature, measurement error, fermentation health, and local conditions can all affect the real result. The goal is transparent arithmetic, not a black-box answer or a guarantee.

How guides are researched

Safety-related claims are grounded in sources such as government food-safety agencies, university extension programs, standards organizations, and peer-reviewed research. Technical baking and brewing guidance may also use established professional or certification organizations where they are the most direct source for the practice being explained.

Sources are listed visibly at the end of each guide. FermentWise distinguishes measured facts from planning estimates, avoids unsupported health claims, and does not present general educational ratios as substitutes for tested food preservation processes.

Editorial principles

  • Answer the reader’s main question early and in plain language.
  • Show formulas, assumptions, units, and useful worked examples.
  • Use original tables and decision aids instead of padded summaries.
  • Link calculations to the guide that explains how to interpret them.
  • Cite authoritative sources close to safety-sensitive claims.
  • Correct and update content when better evidence becomes available.

FermentWise is free to use. The site may be supported by clearly identified advertising. Advertising does not determine calculator results, editorial conclusions, or which sources are cited. Sponsored material, if introduced, will be labeled and kept distinguishable from editorial content.

Fermentation involves living microorganisms and, in some cases, pressure, alcohol, acidity, or food-preservation risk.
